Ian J. Kirby
Ian Kirby is a Massachusetts native who tends to spend summers in Martha's Vineyard and winters down in Palm Beach. He went to undergraduate school at Palm Beach Atlantic University and the London School of Economics where he studied International Business and European Governmental Policy.
Before becoming the head of the club, he managed the outdoor department of Eau Palm Beach. Some of his interests include home brewing and golfing.
A native of Warwick, NY, Chef Kevin Knieriemen launched his culinary career working in restaurants in upstate New York, until moving to Palm Beach, with stops in Baltimore and Myrtle Beach, more than a decade ago. A graduate of Johnson & Wales, Kevin joined the former Ritz-Carlton Palm Beach in the early 2000s as a line cook.
As he continued to rise through the ranks with Ritz-Carlton, he served on several different task force teams at such locations as Vail, CO; Fort Lauderdale, South Beach, Singer Island and Naples, FL, which enabled him to hone his skills while working in many different kitchens.
Kevin was named Chef de Cuisine at Breeze Ocean Kitchen which debuted at Eau Palm Beach in December 2015 after a major makeover. In addition, Kevin also oversees all of La Coquille’s daily menus and special event menus. Leading a team of five cooks, Kevin developed a menu that is a celebration of Floridian cuisine featuring a blend of Latin, Caribbean, Asian and American flavors, utilizing local seafood and seasonal produce. Kevin enjoys participating in a variety of community events, including the Palm Beach Food & Wine Festival, dinners at Swank Farm in Loxahatchee and the No Kid Hungry/Share our Strength program. When not at the resort, Kevin can be found playing his guitar and spending time with his wife and their 4-year-old daughter.
Paula is originally from Lima, Peru. She is a double degree graduate with a major in Management, Marketing, and International Business. She studied at the Peruvian University of Applied Science and Florida International University graduating with honors. Her passion is hospitality. Her dream is to open a hotel in her country, and now she couldn't be happier to be part of La Coquille Club in her role as Club Coordinator. Paula has been a volunteer firefighter and paramedic for 7 years. She loves to dance, travel, spend time with her family and friends, and just enjoy life. For anything you need her, she is more than willing to help with the best disposition and a big smile. She is excited to be part of the La Coquille family.
